A healthy and flavorful baked cod dish with creamy coconut milk and fresh lemon.
Ingredients
4 cod fillets
1 cup coconut milk
2 tbsp lemon juice
1 tsp lemon zest
2 cloves garlic minced
2 tbsp olive oil
Salt and pepper
Fresh parsley or cilantro
Instructions
1. Preheat oven to 180°C and grease baking dish
2. Season cod with salt and pepper
3. Mix coconut milk lemon juice zest and garlic
4. Place cod in dish and pour sauce over
5. Bake 15-20 minutes until flaky
Notes
Do not overcook cod
Use fresh lemon for best flavor
You can substitute cod with other white fish
