Description

Bang Bang Ground Turkey Rice Bowls are a quick and flavorful meal made with juicy ground turkey, fresh vegetables, fluffy rice, and a creamy sweet-spicy bang bang sauce. This easy bowl recipe is perfect for busy weeknights and meal prep.


Ingredients

1 lb ground turkey

2 cups cooked jasmine rice

1 tablespoon olive oil

1 cup chopped red bell pepper

1 cup chopped carrots

1 cup chopped broccoli florets

2 tablespoons soy sauce

Salt and black pepper to taste

2 green onions sliced

1 tablespoon sesame seeds

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha sauce

1 tablespoon lime juice


Instructions

1. Cook jasmine rice according to package instructions and set aside.

2. In a bowl combine mayonnaise sweet chili sauce sriracha and lime juice to prepare the bang bang sauce.

3. Heat olive oil in a large skillet over medium heat.

4. Add ground turkey and cook until browned while breaking it apart with a spoon.

5. Stir in soy sauce salt and black pepper and mix well.

6. Add chopped bell pepper carrots and broccoli and cook for 5 to 7 minutes until vegetables are tender crisp.

7. Pour half of the bang bang sauce into the turkey mixture and stir until coated.

8. Divide cooked rice among serving bowls.

9. Top rice with the turkey and vegetable mixture.

10. Drizzle remaining sauce on top and garnish with green onions and sesame seeds.

Notes

For a lighter sauce substitute part of the mayonnaise with Greek yogurt.

Brown rice or cauliflower rice can replace jasmine rice for a healthier option.

Add extra vegetables like snap peas zucchini or cabbage for more flavor and nutrition.
