Soft and fluffy birthday cake cinnamon rolls filled with cinnamon sugar, packed with rainbow sprinkles, and topped with creamy frosting. Perfect for celebrations and brunch.
Ingredients
3 1/2 cups all-purpose flour
1/4 cup granulated sugar
2 1/4 teaspoons instant yeast
1 cup warm milk
1/4 cup unsalted butter, melted
2 large eggs
1 teaspoon salt
1 tablespoon vanilla extract
1/2 cup rainbow sprinkles
1/2 cup brown sugar
2 teaspoons ground cinnamon
1/4 cup softened butter (for filling)
4 ounces cream cheese, softened
1/4 cup butter, softened
1 1/2 cups powdered sugar
1 teaspoon vanilla extract
1–2 tablespoons milk
Extra sprinkles for topping
Instructions
1. Combine warm milk, sugar, and yeast and let sit until foamy.
2. Add butter, eggs, vanilla, salt, and flour to form dough.
3. Knead until smooth and fold in sprinkles.
4. Let dough rise until doubled.
5. Roll into rectangle, spread butter, and add cinnamon sugar.
6. Roll tightly and slice into rolls.
7. Place in baking dish and let rise again.
8. Bake at 350°F for 20-25 minutes.
9. Beat frosting ingredients until smooth.
10. Spread frosting over warm rolls and top with sprinkles.
Notes
Use jimmies-style sprinkles for best results.
Do not overheat milk.
Store in airtight container up to 2 days.
Can refrigerate overnight before baking.
