Description
A creamy, no-bake Bourbon Peach Icebox Cake made with layers of cookies, whipped cream, fresh peaches, and a touch of bourbon. Perfect for summer!
Ingredients
2 cups fresh sliced peaches
1/2 cup peach jam
1 package butter cookies or shortbread
1/4 cup bourbon (optional)
8 oz cream cheese
1/2 cup crème fraîche or sour cream
1.5 cups whipped cream
Instructions
1. In a bowl, beat cream cheese and crème fraîche until smooth.
2. Fold in whipped cream gently.
3. Layer cookies on the bottom of a springform pan.
4. Brush cookies lightly with bourbon.
5. Add a layer of cream mixture.
6. Top with sliced peaches and dollops of jam.
7. Repeat layers until full. End with cream layer.
8. Cover and chill for at least 4 hours or overnight.
9. Slice and serve chilled.
Notes
Substitute bourbon with peach juice for alcohol-free version.
Use store-bought jam to save time.
Best enjoyed within 3 days.
