Description

Soft and fluffy Brazilian Carrot Cake made with blended carrots and topped with a smooth chocolate glaze. A simple homemade dessert perfect for family gatherings.


Ingredients

Scale

2 cups carrots peeled and chopped

3 eggs

1 cup vegetable oil

1½ cups sugar

2 cups all-purpose flour

1 tablespoon baking powder

1 pinch salt

120 g semi-sweet chocolate

2 tablespoons butter

2 tablespoons cream or milk (optional)


Instructions

1. Preheat oven to 350°F (180°C) and grease a baking pan

2. Blend carrots, eggs, oil, sugar, and salt until smooth

3. In a bowl mix flour and baking powder

4. Pour blended mixture into dry ingredients and stir gently

5. Pour batter into pan and bake for 40–45 minutes

6. Melt chocolate and butter over low heat until smooth

7. Add cream if desired and mix well

8. Pour glaze over slightly cooled cake and spread evenly

9. Allow glaze to set before slicing

Notes

Blend carrots completely smooth for the best texture

Avoid overmixing the batter to keep the cake light

Chocolate glaze can be thickened with condensed milk if desired
