Description

Creamy, cozy, and family-friendly Broccoli Potato Cheese Soup packed with broccoli, tender potatoes, and melty cheddar cheese.


Ingredients

4 cups broccoli florets

3 medium potatoes, peeled and cubed

1 small onion, diced

3 tbsp butter

2 tbsp flour

3 cups milk

1 cup vegetable or chicken broth

2 cups shredded cheddar cheese

Salt and pepper to taste


Instructions

1. Melt butter and sauté onions until soft.

2. Stir in flour to make a roux.

3. Gradually add milk and broth, whisking to combine.

4. Add potatoes and simmer until soft.

5. Add broccoli florets and continue simmering.

6. Remove from heat and stir in cheese until melted.

7. Season and serve warm.

Notes
