Ingredients
1 medium head green cabbage, chopped
3 carrots, sliced
3 celery stalks, chopped
2 bell peppers, diced
2 onions, chopped
3 garlic cloves, minced
1 can (15 oz) crushed tomatoes
6 cups low-sodium broth
1 tbsp olive oil
Salt and pepper to taste
2 tbsp parsley
1 tbsp lemon juice
Instructions
1. Chop all vegetables into small pieces.
2. Heat olive oil and sauté onions, garlic, and celery for 3 minutes.
3. Add cabbage, carrots, bell peppers, and tomatoes.
4. Pour in broth, season, and bring to a boil.
5. Simmer for 20–25 minutes until vegetables are tender.
