Description
A crisp, tangy carrot ribbon salad tossed with lime juice, sesame oil, and tahini. Quick, fresh, and perfect for any meal.
Ingredients
2 large carrots, peeled
½ small red onion, sliced (or 2 green onions, diced)
3 tablespoons toasted white sesame seeds
1 tablespoon good quality olive oil
½ teaspoon toasted sesame oil (or more to taste)
½ small lime, juiced
¼ cup fresh cilantro, finely chopped
optional: 1 large clove garlic, grated on a zester/zester plane
drizzle of tahini
drizzle of pure date syrup
¼ teaspoon salt (or more to taste)
Instructions
1. Peel the carrots and thinly slice the onion.
2. Use a vegetable peeler to make long carrot ribbons.
3. Place all ingredients in a bowl and toss to combine.
4. Taste and adjust lime, salt, or tahini as needed.
5. Drizzle tahini and date syrup on top before serving.
6. Serve immediately while cold.
Notes
You can prep the carrots and onion ahead of time and mix just before serving.
Add more tahini or date syrup to taste.
