Description
A hearty and healthy chicken and white bean soup packed with lean protein, fiber, and herbs.
Ingredients
2 cups shredded chicken
2 cans white beans, drained
4 cups chicken broth
1 onion, diced
2 carrots, sliced
2 celery stalks, chopped
3 garlic cloves, minced
1 tbsp olive oil
1 tsp thyme
1 bay leaf
Salt and pepper to taste
Lemon juice optional
Instructions
1. Heat oil and sauté onion, carrots, and celery until soft.
2. Add garlic and cook until fragrant.
3. Stir in chicken, beans, broth, and herbs.
4. Simmer for 25–30 minutes.
5. Adjust seasoning and serve hot.
Notes
For extra creaminess, blend 1 cup of the soup and stir it back in.
Garnish with fresh parsley or spinach.
