Description
A sweet and smoky ham recipe featuring chipotle peppers, pineapple glaze, and warm jerk spices. Perfect for festive dinners and family gatherings.
Ingredients
1 bone-in fully cooked ham (9–11 lb)
2 cups chopped pineapple
1 tbsp garlic powder
2 tsp onion powder
2 tsp ground thyme
2 tsp brown sugar
2 tsp black pepper
2 tsp chipotle chili powder
1 tsp smoked paprika
1 tsp ground allspice
1/2 tsp cinnamon
1/2 tsp kosher salt
2 tsp cayenne pepper
1/2 cup brown sugar
1/2 cup maple syrup
3/4 cup pineapple juice
1–2 chipotle peppers in adobo sauce
1 tbsp lemon juice
Instructions
1. Remove ham from refrigerator and allow it to rest at room temperature for about 1–2 hours.
2. Preheat oven to 325°F (163°C) and place ham in a roasting pan.
3. Mix all spice rub ingredients and coat the ham evenly.
4. Cover with foil and bake for about 1½ hours.
5. In a saucepan combine brown sugar, maple syrup, pineapple juice, chipotle peppers, and lemon juice.
6. Simmer the glaze for 10–15 minutes until slightly thickened.
7. Increase oven temperature to 400°F (204°C).
8. Brush glaze over ham and scatter chopped pineapple around the pan.
9. Bake uncovered for 25–30 minutes, glazing once or twice.
10. Let ham rest for 5–10 minutes before slicing and serving.
Notes
Score the ham lightly before seasoning for deeper flavor.
Adjust cayenne and chipotle levels to control spice.
Apply glaze multiple times for a thicker caramelized coating.
Leftovers can be refrigerated for up to 4 days.
