Description
These festive Christmas Pinwheel Cookies feature buttery vanilla dough rolled into red and green swirls — a holiday favorite for parties, gifting, and family baking traditions.
Ingredients
2/3 cup unsalted butter, softened
2/3 cup sugar
1 large egg
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1/2 teaspoon kosher salt
1/4 teaspoon baking soda
Red and green gel food coloring
Red sanding sugar to garnish
Instructions
1. Cream butter and sugar until light and fluffy.
2. Add egg and vanilla extract; mix well.
3. Whisk flour, salt, and baking soda together.
4. Gradually add dry ingredients to wet mixture.
5. Divide dough into three equal parts: color one red, one green, leave one plain.
6. Chill dough portions for 1 hour.
7. Roll each between parchment paper, then stack and roll into a log.
8. Freeze 1 hour; slice and coat edges with red sanding sugar.
9. Bake at 350°F for 8–10 minutes or until just set.
Notes
You can freeze the dough logs for up to 3 months and bake straight from frozen.
