A fresh, colorful, and easy Christmas Salad with Honey Mustard Dressing — filled with pomegranate, feta, and walnuts for a festive crunch.
Ingredients
6 cups mixed greens
1 cup pomegranate arils
½ cup crumbled feta cheese
½ cup chopped walnuts
3 tbsp olive oil
1 tbsp honey
1 tbsp Dijon mustard
1 tbsp apple cider vinegar
Salt & pepper to taste
Instructions
1. Wash and dry the mixed greens; place in a large bowl.
2. Add pomegranate seeds, feta, and chopped walnuts.
3. Whisk together olive oil, honey, mustard, vinegar, salt, and pepper.
4. Drizzle dressing over salad just before serving and toss gently.
Notes
To make vegan, replace honey with maple syrup and omit cheese or use vegan feta.
Toast nuts lightly for added flavor. Serve immediately for best freshness.
