Description
This cottage cheese banana bread is moist, protein-packed, and perfectly sweet thanks to ripe bananas and creamy cottage cheese.
Ingredients
3 very ripe medium bananas, peeled
3/4 cup cottage cheese (2% or higher)
2 large eggs
6 Tbsp unsalted butter, melted and cooled
2 tsp vanilla extract
1/2 cup granulated sugar
1 cup whole wheat all-purpose flour
1 cup white all-purpose flour
1 tsp baking soda
3/4 tsp salt
1 tsp cinnamon
1/2 cup chocolate chips (optional), reserve 2-3 Tbsp for topping
Instructions
1. Preheat oven to 350°F. Grease and line loaf pan with parchment.
2. In blender, combine bananas, cottage cheese, and eggs. Blend until smooth.
3. Transfer to bowl. Add melted butter, vanilla, and sugar. Whisk.
4. In separate bowl, whisk flours, baking soda, salt, and cinnamon.
5. Add dry mix to wet mix. Stir gently just until combined.
6. Fold in chocolate chips, reserving some for topping.
7. Pour into pan. Smooth the top. Sprinkle extra chips.
8. Bake 45-55 mins or until toothpick comes out clean.
9. Cool completely before slicing and serving.
Notes
Best stored in an airtight container for up to 3 days.
Can be frozen for up to 2 months.
Great as muffins too—adjust baking time to 18–22 minutes.
