Ingredients
Butter (or olive oil)
Onion, finely chopped
Garlic cloves, minced
Mushrooms (cremini, button, or mixed)
Vegetable or chicken broth
Cottage cheese
Dried thyme
Salt and black pepper
Fresh parsley (garnish)
Instructions
1. Sauté onion and garlic in butter until soft.
2. Add mushrooms and cook until golden.
3. Pour in broth and add seasonings; simmer 10 minutes.
4. Blend soup with cottage cheese until smooth.
5. Adjust seasoning, reheat, and serve with parsley.
Notes
Use olive oil for dairy-free.
