Description
This cottage cheese pasta sauce is creamy, rich in protein, and incredibly easy to prepare. A healthier twist on traditional cream sauces.
Ingredients
1 cup cottage cheese (full fat)
1 garlic clove (optional)
1/4 cup milk or pasta water
Salt and pepper to taste
2 tablespoons parmesan (optional)
Fresh basil or parsley for garnish
12 oz cooked pasta of choice
Instructions
1. Blend cottage cheese, garlic, and milk until smooth.
2. Warm the sauce in a saucepan over low heat, stirring constantly.
3. Add cooked pasta to the sauce and stir to combine.
4. Season with salt, pepper, and parmesan if using.
5. Garnish with fresh herbs and serve immediately.
Notes
Use a high-speed blender for the smoothest texture.
Add lemon zest or chili flakes for extra flavor.
Great with penne, fusilli, or rigatoni.
