Description

Cheesy, creamy, and spicy sausage balls made with cream cheese and RO*TEL – an easy crowd-pleasing appetizer.


Ingredients

1 lb breakfast sausage (mild or hot)

8 oz cream cheese, softened

1 can (10 oz) RO*TEL diced tomatoes with green chiles, drained

2 cups baking mix (like Bisquick)

2 cups shredded cheddar or Mexican blend cheese


Instructions

1. Preheat oven to 375°F (190°C) and line a baking sheet.

2. In a large bowl, mix sausage, cream cheese, drained RO*TEL, baking mix, and cheese until combined.

3. Roll mixture into 1-inch balls and place on baking sheet.

4. Bake 18–25 minutes until golden brown and cooked through.

5. Cool 5 minutes before serving.

Notes

Use turkey sausage for a lighter version.

Drain RO*TEL well to prevent excess moisture.

Freeze raw or baked sausage balls for up to 2 months.
