Ingredients
1 lb Italian sausage
1 tbsp olive oil
1 onion, diced
3 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
16 oz potato gnocchi
2 cups spinach
½ cup Parmesan cheese
Salt, pepper, red pepper flakes
Instructions
1. Brown sausage in olive oil.
2. Add onion and garlic; cook until soft.
3. Pour in broth and simmer 5 minutes.
4. Add gnocchi; cook until tender.
5. Stir in cream and spinach; simmer until wilted.
6. Finish with Parmesan; season and serve.
Notes
Swap pork sausage for turkey or chicken.
Use coconut milk for dairy-free.
Add kale instead of spinach for texture.
