Description
Creamy turkey soup recipe made with leftover turkey, aromatic vegetables, herbs, and rich cream.
Ingredients
2 cups shredded turkey
1 tbsp butter
1 small onion, chopped
2 carrots, diced
2 celery stalks, diced
3 cups turkey stock
1 cup cream or half-and-half
2 tbsp flour
Salt, pepper, thyme to taste
Instructions
1. Melt butter and sauté vegetables.
2. Add flour and stir to thicken.
3. Pour in stock gradually, whisking.
4. Add turkey and simmer for 15 minutes.
5. Stir in cream and season.
6. Serve hot with herbs and bread.
Notes
For a dairy-free version, use coconut milk.
Do not boil after adding cream to prevent curdling.
