Description
Slow-cooked Crockpot Lasagna Soup brings all the flavors of traditional lasagna into a cozy, cheesy soup that’s effortless to make in your slow cooker.
Ingredients
1 lb ground beef or Italian sausage
1 medium onion, chopped
3 garlic cloves, minced
1 can (28 oz) crushed tomatoes
2 tbsp tomato paste
4 cups beef or chicken broth (low-sodium)
8–10 lasagna noodles, broken into pieces
1 tbsp Italian seasoning
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1 cup grated Parmesan cheese
Salt and pepper to taste
Fresh basil or parsley for garnish
Instructions
1. Brown the ground beef or sausage in a skillet; drain any excess fat.
2. Add cooked meat, onion, garlic, crushed tomatoes, tomato paste, broth, and seasonings into the crockpot.
3. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
4. Add broken lasagna noodles during the final 30 minutes of cooking.
5. Before serving, stir in ricotta and sprinkle mozzarella and Parmesan on top.
6. Serve hot, garnished with fresh basil or parsley.
Notes
Use vegetable broth and mushrooms for a vegetarian version.
Store leftovers in the fridge for up to 4 days or freeze for up to 3 months.
Add extra broth or water when reheating if the soup thickens.
Cook noodles separately if freezing to maintain texture.
