Soft carrot cake bars topped with a creamy cheesecake swirl. These easy carrot cake cream cheese bars are moist, spiced, and perfect for simple homemade desserts.
Ingredients
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup unsalted butter softened
3/4 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups finely grated carrots
8 ounces cream cheese softened
1/4 cup granulated sugar
1 large egg
1/2 teaspoon vanilla extract
Instructions
1. Preheat oven to 350°F and line an 8×8-inch baking pan with parchment paper.
2. Whisk flour baking powder baking soda cinnamon and salt in a bowl.
3. Beat butter and brown sugar until fluffy then add eggs and vanilla.
4. Mix dry ingredients into wet ingredients and fold in grated carrots.
5. Spread batter evenly into the prepared pan.
6. Beat cream cheese sugar egg and vanilla until smooth.
7. Pour cream cheese mixture over batter and gently swirl.
8. Bake for 30–35 minutes until the center is set.
9. Cool completely before slicing into bars.
Notes
Use freshly grated carrots for best moisture and texture.
Allow bars to cool fully before cutting.
Store leftovers in the refrigerator for up to 5 days.
Bars can be frozen for up to 3 months.
