Description
Easy Crockpot Ham and Potato Casserole is a creamy, cheesy slow cooker dinner made with tender potatoes and savory ham. Perfect for using leftovers and feeding the whole family.
Ingredients
4 cups diced potatoes
2 cups cooked ham, cubed
1 small yellow onion, chopped
1 can (10.5 oz) cream of chicken soup
1 cup whole milk
2 cups shredded cheddar cheese
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
Optional parsley or green onions for garnish
Instructions
1. Peel and dice potatoes evenly.
2. Chop onion and cube cooked ham.
3. Mix soup, milk, garlic powder, salt, pepper, and 1 1/2 cups cheese until smooth.
4. Add potatoes, ham, and onion to crockpot.
5. Pour sauce over ingredients and stir gently to coat.
6. Cover and cook on low for 6–7 hours or high for 3–4 hours until potatoes are fork tender.
7. Sprinkle remaining 1/2 cup cheese on top 15 minutes before serving and allow to melt.
8. Garnish with parsley or green onions and serve warm.
Notes
Use Yukon gold potatoes for a firmer texture.
You can substitute ham with smoked turkey or shredded chicken if preferred.
Add frozen peas or diced carrots for extra vegetables.
Store leftovers in the refrigerator up to 4 days.
Add a splash of milk when reheating if sauce thickens.
