Ingredients
4 large eggs, separated
¾ cup granulated sugar
½ cup unsalted butter, melted
¾ cup all-purpose flour
2 cups whole milk, lukewarm
⅓ cup fresh lemon juice
1 tablespoon lemon zest
1 teaspoon vanilla extract
Powdered sugar, for dusting
Instructions
1. Preheat oven to 325°F (160°C) and grease an 8-inch baking dish.
2. Separate eggs into yolks and whites.
3. Whisk egg yolks with sugar until pale and creamy.
4. Mix in melted butter, lemon juice, lemon zest, and vanilla extract.
5. Add flour and whisk until smooth.
6. Slowly pour in lukewarm milk while mixing until batter is thin.
7. Beat egg whites until stiff peaks form.
8. Gently fold egg whites into the batter.
9. Pour batter into prepared baking dish.
10. Bake for 45–55 minutes until the top is lightly golden and center slightly jiggles.
11. Allow cake to cool completely, then refrigerate for 1–2 hours.
12. Dust with powdered sugar before serving.
