Description
Easy One Pot Queso Chicken and Rice is a creamy, cheesy Tex-Mex inspired dinner made in one pot with tender chicken, flavorful rice, and melted queso.
Ingredients
1½ pounds boneless, skinless chicken breasts, diced
1 tablespoon olive oil
1 small onion, diced
3 cloves garlic, minced
1 cup long-grain white rice
2 cups low-sodium chicken broth
1 can (10 oz) diced tomatoes with green chilies, undrained
1 packet taco seasoning (2 tablespoons)
1 to 1½ cups queso cheese or shredded cheddar
Salt and black pepper to taste
Instructions
1. Heat olive oil in a large skillet over medium heat. Add chicken and cook until lightly browned. Remove and set aside.
2. In the same pot, sauté onion until softened. Add garlic and cook briefly.
3. Stir in rice, chicken broth, diced tomatoes, and taco seasoning.
4. Return chicken to the pot and stir to combine.
5. Bring to a boil, reduce heat, cover, and simmer 18–22 minutes until rice is tender.
6. Remove from heat and stir in cheese until melted and creamy.
Notes
Use freshly shredded cheese for best melting.
Add black beans or corn for extra nutrition.
Add a splash of broth when reheating leftovers to maintain creaminess.
