Description

Moist tropical loaf cake made with coconut milk and fresh lime for a bright citrus flavor and tender crumb.


Ingredients

2 cups all-purpose flour

1 cup granulated sugar

1 cup coconut milk

2 large eggs

1 teaspoon baking powder

1/4 teaspoon salt

Zest of 2 limes

2 tablespoons fresh lime juice

1/2 cup unsweetened coconut flakes

1 cup powdered sugar (optional glaze)

23 tablespoons lime juice (for glaze)


Instructions

1. Preheat oven to 350°F (175°C) and grease a loaf pan.

2. In a bowl whisk flour, baking powder, and salt.

3. In another bowl mix eggs, sugar, coconut milk, lime juice, and lime zest.

4. Add dry ingredients to wet ingredients and mix gently until combined.

5. Fold in coconut flakes.

6. Pour batter into loaf pan and smooth the top.

7. Bake 50–60 minutes until a toothpick inserted in the center comes out clean.

8. Cool the cake on a rack before glazing.

9. Mix powdered sugar with lime juice and drizzle over cooled cake.

Notes

Use fresh lime zest for the best citrus flavor.

Avoid overmixing the batter to keep the cake soft.

Toast coconut flakes lightly for deeper coconut flavor.
