Ingredients
2 heads garlic, peeled
6 cups chicken or vegetable broth
3 egg yolks
1/2 cup olive oil
1 bay leaf
1 sprig thyme
Salt and pepper to taste
Crusty bread and grated cheese for serving
Instructions
1. Peel and blanch garlic twice to soften.
2. Simmer garlic with broth, bay leaf, and thyme for 25 minutes.
3. Whisk egg yolks and slowly drizzle in olive oil to make an emulsion.
4. Temper eggs with hot broth, then stir back into pot off heat.
5. Blend soup if desired for smooth texture.
6. Serve hot with toasted bread and cheese.
Notes
Do not boil after adding eggs to prevent curdling.
Use vegetable broth for vegetarian option.
