Description
Fresh Honey Lime Chicken is a quick and vibrant dish made with juicy chicken in a sweet tangy honey lime glaze served over creamy avocado rice.
Ingredients
2 boneless skinless chicken breasts
1/4 cup honey
Juice of 2 limes
Zest of 1 lime
2 cloves garlic minced
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup cooked white rice
1 ripe avocado diced
1/4 cup chopped cilantro
1/2 tablespoon lime juice
Salt and pepper to taste
Instructions
1. In a bowl whisk together honey lime juice lime zest garlic salt and pepper to make the marinade.
2. Add chicken to the marinade and let it sit for 15 minutes.
3. Heat olive oil in a skillet over medium heat and cook chicken for 6 to 7 minutes per side until cooked through.
4. Remove chicken from the pan and let it rest before slicing.
5. In another bowl mix cooked rice avocado cilantro lime juice salt and pepper.
6. Place avocado rice on a plate and top with sliced honey lime chicken.
7. Garnish with cilantro and lime wedges before serving.
Notes
Use fresh lime juice for the best flavor.
Brown rice or quinoa can replace white rice.
Add corn or tomatoes for extra color and texture.
Chicken thighs can be used instead of chicken breasts.
