Description

Fresh Spinach & Lemon Spaghetti is a creamy, bright pasta recipe with garlic, parmesan, and fresh spinach. Ready in about 25 minutes, it’s perfect for a quick and comforting meal.


Ingredients

8 oz spaghetti

3 cups fresh spinach

1/2 onion finely chopped

3 garlic cloves minced

1 cup cooking cream

1 cup grated parmesan cheese

1 cup vegetable stock

1 cup reserved pasta water

Juice of 1 lemon

Zest of 1 lemon

2 tablespoons butter

2 tablespoons olive oil

1 dried chili optional

1 bay leaf

2 tablespoons fresh parsley chopped

Salt to taste

Black pepper to taste


Instructions

1. Bring a large pot of salted water to a boil and cook spaghetti until al dente. Reserve 1 cup pasta water and drain.

2. Heat olive oil in a large skillet over medium heat. Add garlic, chili, and bay leaf and cook for about 1 minute.

3. Add chopped onion and cook for 3–4 minutes until softened.

4. Pour in vegetable stock and simmer. Add cream and stir until combined.

5. Stir in lemon juice and allow the sauce to cook for a few minutes.

6. Add cooked spaghetti and half the reserved pasta water. Toss to coat.

7. Stir in butter, spinach, parmesan, parsley, and lemon zest. Season with salt and pepper and serve warm.

Notes

Use freshly grated parmesan for the best melting texture.

Whole-wheat spaghetti can be used for extra fiber.

Add mushrooms or grilled chicken for a heartier meal.

Adjust lemon juice to taste for more or less brightness.
