Ingredients
2 tbsp olive oil
5–6 garlic cloves, minced
1 medium onion, chopped (optional)
6 cups chopped broccoli
6 cups chicken or vegetable broth
½ tsp salt
½ tsp pepper
Pinch nutmeg (optional)
1 cup small pasta (orzo or ditalini)
½ cup grated Parmesan
Extra olive oil for serving
Instructions
1. Heat olive oil, sauté garlic and onion until fragrant.
2. Add broccoli, broth, salt, pepper, and nutmeg. Simmer until tender.
3. Lightly mash or blend part of the soup for texture.
4. Add pasta and cook until tender.
5. Stir in Parmesan, drizzle with olive oil, and serve warm.
Notes
Use vegetable broth for vegetarian version.
Swap Parmesan with nutritional yeast for dairy-free option.
