Juicy, flavorful garlic parmesan chicken meatloaf made with lean chicken, fresh garlic, and cheesy goodness — a healthy comfort food favorite.
Ingredients
1½ lbs ground chicken
½ cup grated Parmesan cheese
½ cup breadcrumbs (or almond flour)
3 cloves garlic, minced
1 large egg
¼ cup milk (or almond milk)
1 tbsp chopped parsley
1 tsp Italian seasoning
½ tsp salt
¼ tsp black pepper
2 tbsp grated Parmesan (for topping)
1 tbsp olive oil (optional)
Instructions
1. Preheat oven to 375°F (190°C). Grease or line a loaf pan.
2. Combine ground chicken, Parmesan, breadcrumbs, garlic, egg, milk, parsley, and seasonings. Mix gently.
3. Shape into a loaf and place in pan. Top with extra Parmesan and drizzle of olive oil.
4. Bake 40–45 minutes or until internal temperature reaches 165°F.
5. Let rest 10 minutes before slicing and serving.
Notes
Use almond flour for low-carb or gluten-free version.
Replace Parmesan with nutritional yeast for dairy-free.
Do not overmix; it keeps the loaf tender.
Broil briefly for a golden top.
