Description
Garlic Roasted Rack of Lamb is a tender, flavorful oven-roasted dish made with garlic, herbs, butter, and lemon sauce. Perfect for special dinners or holiday meals.
Ingredients
1 rack of lamb (about 8 ribs)
1 teaspoon kosher salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon chicken stock powder
10 whole garlic cloves
Fresh thyme sprigs
1/2 cup unsalted butter, diced
6 tablespoons melted butter
Juice of 1/2 lemon
Zest of 1/2 lemon
4 garlic cloves, minced
1 tablespoon Dijon mustard
1 tablespoon chopped parsley
1 teaspoon chopped chives
1/2 teaspoon paprika
Pinch cayenne pepper
Salt and black pepper to taste
Instructions
1. Preheat oven to 425°F (220°C).
2. Pat the rack of lamb dry and season with salt, pepper, garlic powder, onion powder, and chicken stock powder.
3. Spread whole garlic cloves and thyme sprigs in the bottom of a roasting pan.
4. Place the seasoned rack of lamb on top with the fat side facing up.
5. Scatter diced butter evenly over the lamb.
6. Roast for 20–25 minutes until the internal temperature reaches about 135°F for medium-rare.
7. Remove from oven and let the lamb rest for 10 minutes.
8. In a small bowl mix melted butter, lemon juice, lemon zest, minced garlic, Dijon mustard, parsley, chives, paprika, cayenne pepper, salt, and black pepper.
9. Slice the rack between the ribs into individual chops.
10. Serve the garlic roasted rack of lamb with roasted garlic and drizzle with butter sauce.
Notes
Use a meat thermometer for best results and perfect doneness.
Let the lamb rest before slicing to keep the juices inside.
Roasted garlic from the pan can be served alongside the lamb or spread on bread.
For a lighter option, replace part of the butter with olive oil.
