Description
This grilled cheese burrito is crispy on the outside, cheesy and bold inside. Perfect for dinner, meal prep, or comfort cravings.
Ingredients
1 lb ground beef
1 tbsp olive oil
1 onion, diced
1 tsp salt
1 tsp black pepper
1 tsp smoked paprika
1 tsp oregano
½ cup tomato sauce
4 large flour tortillas
3 tbsp spicy mayo
1 cup fried rice
1 cup nacho cheese sauce
1 cup sour cream
1 cup tortilla chips, crushed
Instructions
1. Sauté onion until soft, add beef and seasonings. Cook until browned.
2. Stir in tomato sauce and simmer.
3. Layer tortilla with spicy mayo, rice, cheese sauce, sour cream, chips, and beef.
4. Roll tightly and press closed.
5. Grill seam-side down on a hot skillet with shredded cheese for a crispy crust.
6. Serve hot with extra mayo or salsa.
Notes
For a vegetarian version, swap in beans or sautéed mushrooms.
Leftovers reheat best in a skillet or toaster oven, not microwave.
