A comforting homemade turkey soup recipe using leftover turkey, fresh vegetables, herbs, and noodles for a hearty and delicious meal.
Ingredients
2 tbsp olive oil
1 medium onion, chopped
2 ribs celery, chopped
3 carrots, sliced
3 cloves garlic, minced
8 cups turkey or chicken broth
3 cups cooked turkey, diced
1 tsp salt
1/2 tsp black pepper
1 tsp dried thyme
1 tsp dried rosemary
2 cups cooked egg noodles
1/4 cup chopped fresh parsley
Instructions
1. Heat olive oil and sauté onion, celery, and carrots for 5 minutes.
2. Add garlic, thyme, and rosemary; cook until fragrant.
3. Add turkey and broth; bring to a boil.
4. Reduce heat and simmer 15–20 minutes.
5. Stir in cooked noodles and parsley; season to taste.
6. Serve hot and enjoy!
Notes
Use leftover turkey for quick prep.
Substitute noodles with rice or barley for variation.
Store in fridge 4 days or freeze 3 months.
