Description
Sweet and smoky Honey BBQ Chicken Rice is a quick one-pan dinner made with tender chicken, fluffy rice, vegetables, and rich barbecue sauce.
Ingredients
1 lb boneless skinless chicken breast or thighs, diced
1 cup long grain white rice, rinsed
2 cups chicken broth
1/2 cup BBQ sauce
1/4 cup honey
1 cup mixed vegetables (peas, carrots, corn, or bell peppers)
2 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1/2 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
2 tbsp green onions (optional garnish)
Instructions
1. Season diced chicken with garlic powder, onion powder, paprika, salt, and pepper.
2. Heat olive oil in a large skillet over medium heat and cook chicken until lightly golden. Remove and set aside.
3. Add rinsed rice to the same pan and toast for 1–2 minutes.
4. Pour in chicken broth, BBQ sauce, and honey. Stir well.
5. Return chicken to the pan and bring mixture to a simmer.
6. Cover and cook for about 15 minutes on low heat.
7. Add mixed vegetables, cover again, and cook for 5 more minutes.
8. Remove from heat, rest 5 minutes, fluff rice, garnish, and serve.
Notes
Use low-sodium broth to reduce salt.
Add chili flakes if you prefer a spicy version.
Brown rice can be used but will require longer cooking time.
