Description
Juicy honey-lime chicken layered over fluffy rice and creamy avocado for a beautiful, easy weeknight dinner.
Ingredients
2 chicken breasts
2 tbsp honey
2 tbsp lime juice
1 tsp lime zest
2 cloves garlic
2 tbsp olive oil
1½ cups cooked jasmine rice
1 tbsp butter
1–2 ripe avocados
Salt, pepper, lime, cilantro for garnish
Instructions
1. Whisk honey, lime, garlic, and oil; marinate chicken 30 minutes.
2. Cook rice; mix with butter, lime juice, and zest.
3. Grill or pan-sear chicken 5–6 minutes per side.
4. Mash avocado with lime juice, salt, and pepper.
5. Layer rice, avocado, and sliced chicken to serve.
Notes
Use thighs for juicier meat. Brown rice adds fiber. Make vegetarian by swapping chicken for tofu.
