Description
Irish soda bread scones made with buttermilk and baking soda for a tender, rustic crumb. These traditional Irish scones bake quickly and pair perfectly with butter and jam.
Ingredients
3 cups all-purpose flour
1 tablespoon sugar (optional)
1 teaspoon baking soda
1 teaspoon salt
6 tablespoons cold unsalted butter, cubed
1 1/4 cups buttermilk
1/2 cup raisins (optional)
Instructions
1. Preheat oven to 400°F and line a baking sheet with parchment paper.
2. Whisk flour, sugar, baking soda, and salt in a large mixing bowl.
3. Cut cold butter into the flour mixture until coarse crumbs form.
4. Stir in raisins if using.
5. Pour in buttermilk and mix gently just until combined.
6. Turn dough onto a lightly floured surface and shape into a 1-inch thick round.
7. Cut into 8 wedges and place on prepared baking sheet.
8. Bake 18–22 minutes until golden brown.
9. Cool slightly and serve warm.
Notes
Do not overmix the dough.
Bake within 15 minutes of mixing for best texture.
Serve warm with butter or jam.
Store in an airtight container for up to 2 days.
