Description
Soft and lightly sweet Italian Easter Cookies flavored with anise and topped with colorful sprinkles. These festive cookies are perfect for Easter celebrations and spring gatherings.
Ingredients
3 cups all-purpose flour
1 cup granulated sugar
3 large eggs
1/2 cup olive oil
1 tablespoon anise extract
1 teaspoon baking powder
Pinch of salt
Colored sprinkles for decoration
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a medium bowl whisk together flour, baking powder, and salt.
3. In a large bowl beat eggs and sugar until pale and slightly thick.
4. Add olive oil and anise extract and mix until smooth.
5. Gradually add the dry ingredients and mix until a soft dough forms.
6. Roll dough into 1-inch balls and place them on the prepared baking sheet.
7. Press colorful sprinkles on top of each cookie.
8. Bake for 18–25 minutes until the bottoms are lightly golden.
9. Allow cookies to cool on a wire rack before serving.
Notes
Do not overbake to keep the cookies soft.
Vanilla or lemon extract can replace anise extract if preferred.
Store cookies in an airtight container for up to 5 days.
These cookies can be frozen for up to 3 months.
