Description
Italian Tortellini Pasta Salad is a fresh summer favorite made with cheese tortellini, crisp vegetables, mozzarella, and zesty Italian dressing. Perfect for potlucks, picnics, and easy family dinners.
Ingredients
20 ounces cheese tortellini
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/4 cup red onion, sliced
1/2 cup black olives
1 cup mozzarella balls
3/4 cup salami or smoked turkey
2 tablespoons parsley or basil
1/3 cup olive oil
3 tablespoons red wine vinegar
1 teaspoon Italian seasoning
1 clove garlic, minced
Salt and pepper to taste
Instructions
1. Cook tortellini according to package directions. Drain and cool.
2. Chop vegetables and slice cheese and meat.
3. Whisk dressing ingredients until combined.
4. Combine all ingredients in large bowl.
5. Toss with dressing evenly.
6. Refrigerate 30–60 minutes before serving.
Notes
Use lemon juice instead of vinegar for lighter flavor.
Substitute smoked turkey or chickpeas for pork-free option.
Store in refrigerator up to 4 days.
