Description
Oven-baked jerk chicken that’s full of bold, smoky spice—no grill needed. Easy to prep, marinate, and broil for island-inspired flavor at home.
Ingredients
2 to 3 lbs bone-in chicken thighs or drumsticks
4 scallions, chopped
4 garlic cloves, minced
1 tbsp grated fresh ginger
1 tbsp chopped fresh thyme
1 tsp ground allspice
1/4 tsp cinnamon
1 tbsp brown sugar
1 minced Scotch bonnet or habanero pepper
2 tbsp soy sauce
2 tbsp lime juice
Instructions
1. Preheat oven to 400°F (200°C).
2. Lightly grease or foil-line a large baking dish.
3. Add chicken to the jerk marinade and coat well.
4. Place chicken in the dish, cover with foil, and bake for 30 minutes.
5. Remove foil, bake uncovered for another 15–20 minutes.
6. Broil for 2–3 minutes for charred finish.
7. Let rest 10 minutes before serving.
Notes
Marinate chicken overnight if possible for deeper flavor.
Adjust heat by using more or less hot pepper.
Serve with coconut rice or mango slaw.
