Description
A moist, bright Lemon Blueberry Smoothie Cake that blends fresh berries, lemon zest, and a touch of blueberry smoothie for incredible flavor.
Ingredients
2 cups all-purpose flour
2 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter
1 cup sugar
2 large eggs
1 cup blueberry smoothie
1 tbsp lemon zest
2 tbsp lemon juice
1 1/2 cups blueberries
Instructions
1. Preheat oven to 350°F. Grease a loaf pan.
2. Cream butter and sugar until fluffy.
3. Beat in eggs, one at a time.
4. Add smoothie, lemon zest, and juice. Stir gently.
5. Fold in dry ingredients until just combined.
6. Fold in blueberries.
7. Pour into pan. Bake 50–60 minutes.
8. Cool before slicing.
Notes
Use frozen blueberries without thawing.
Wrap leftovers tightly for freshness.
Add lemon glaze for extra flavor.
