Ingredients
12 oz pasta
1 cup ricotta cheese
2 cups fresh spinach
1 lemon (zest and juice)
1/4 cup grated parmesan cheese
2 tablespoons olive oil
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup reserved pasta water
Instructions
1. Bring a large pot of salted water to a boil and cook the pasta until al dente. Reserve 1/4 cup pasta water and drain the pasta.
2. Heat olive oil in a large skillet over medium heat. Add minced garlic and cook for about 30 seconds until fragrant.
3. Add fresh spinach to the skillet and cook until wilted, stirring occasionally.
4. In a bowl, mix ricotta cheese, lemon zest, lemon juice, parmesan cheese, salt, and black pepper until smooth.
5. Add the cooked pasta to the skillet with spinach and reduce heat to low.
6. Stir in the ricotta mixture and a small amount of reserved pasta water to create a creamy sauce.
7. Toss everything together until the pasta is evenly coated.
8. Serve warm with extra parmesan and lemon zest if desired.

Use whole milk ricotta for the creamiest texture.
