Light Cucumber Avocado Rolls are a fresh, no-cook appetizer made with thin cucumber slices wrapped around a creamy avocado filling. Perfect for parties, snacks, and healthy lunches.
Ingredients
2 large cucumbers
2 ripe avocados
4 oz cream cheese (or Greek yogurt)
1 tablespoon lemon or lime juice
1 small garlic clove, minced
1–2 tablespoons fresh cilantro or parsley, chopped
Salt to taste
Black pepper to taste
1/4 cup shredded carrots (optional)
1/4 cup thinly sliced bell peppers (optional)
Sesame seeds (optional garnish)
Instructions
1. Wash and slice cucumbers lengthwise into thin strips.
2. Pat cucumber slices dry with paper towels.
3. Mash avocados in a bowl until smooth.
4. Mix in cream cheese, citrus juice, garlic, herbs, salt, and pepper.
5. Spread a thin layer of filling onto each cucumber strip.
6. Add optional shredded carrots or bell peppers.
7. Roll tightly and place seam-side down on a plate.
8. Chill for 10–15 minutes before serving.
Notes
Use English cucumbers for best results.
For a lighter option, substitute cream cheese with Greek yogurt.
For dairy-free, use plant-based cream cheese.
