Ingredients
1 cup finely grated carrots
1 cup unsweetened applesauce
3/4 cup sugar
1 cup all-purpose flour
1/2 teaspoon cinnamon (optional)
1/2 teaspoon vanilla extract (optional)
Pinch of salt (optional)
Instructions
1. Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.
2. In a mixing bowl combine applesauce and sugar until smooth.
3. Add flour and optional cinnamon then mix until a soft dough forms.
4. Fold in finely grated carrots and stir until evenly combined.
5. Scoop small portions of dough onto the prepared baking sheet.
6. Flatten each cookie slightly with the back of a spoon.
7. Bake for 8–10 minutes until the edges are lightly golden.
8. Allow cookies to cool on a rack before serving.
Notes
Use finely grated carrots for the best texture.
Do not overbake to keep the cookies soft and moist.
Optional cinnamon and vanilla enhance the carrot cake flavor.
Store cookies in an airtight container for up to 3 days.
