Description
A hearty and healthy Mounjaro diet soup recipe made with lean chicken, fresh vegetables, and herbs. Low-calorie, filling, and perfect for weight loss.
Ingredients
1 tbsp olive oil
1 medium onion, chopped
3 garlic cloves, minced
2 carrots, sliced
3 celery stalks, chopped
2 zucchinis, diced
2 cups spinach or kale
1 can diced tomatoes (14 oz)
1 lb chicken breast, cubed
6 cups low-sodium chicken broth
1 cup cooked lentils (optional)
Herbs (parsley, thyme, basil) to taste
Salt and pepper to taste
Instructions
1. Heat olive oil in a large pot, sauté onion and garlic.
2. Add carrots and celery, cook until softened.
3. Stir in zucchini and tomatoes.
4. Add chicken breast, season with salt and pepper.
5. Pour in broth, bring to boil, then simmer for 20 minutes.
6. Add spinach or kale in the last 5 minutes.
7. Stir in lentils if desired.
8. Garnish with fresh parsley or basil and serve warm.
Notes
Store in fridge for up to 4 days or freeze in batches for meal prep.
Swap chicken for beans or tofu for a vegetarian version.
Add chili flakes, lemon juice, or fresh herbs to boost flavor without extra calories.
