Description
A cheesy, zesty, one-pan pasta bake that’s quick to make, packed with taco flavor, and loved by the whole family.
Ingredients
1 tablespoon olive oil
1 pound ground beef
1 small onion, chopped
1 packet taco seasoning
1 can (10 oz) diced tomatoes with green chilies
1 cup salsa
2 cups beef broth
2 cups uncooked pasta shells
1½ cups shredded cheddar cheese
½ cup shredded mozzarella cheese
Fresh cilantro (for garnish)
Sour cream (optional)
Instructions
1. In an oven-safe skillet, heat olive oil over medium heat.
2. Sauté chopped onions for 2–3 minutes.
3. Add ground beef and cook until browned. Drain excess fat.
4. Stir in taco seasoning, tomatoes, salsa, and beef broth.
5. Mix in uncooked pasta shells.
6. Bring to a boil, then simmer for 12–15 minutes.
7. Stir in 1 cup cheddar and all mozzarella.
8. Top with remaining cheddar and broil 2–3 minutes until bubbly.
9. Garnish with cilantro and serve with sour cream.
Notes
Try ground turkey or beans for a lighter version.
Add jalapeños or hot sauce for more heat.
Freezes well in individual portions for meal prep.
