Description
Soft pastel-colored sugar cookies filled with fluffy vanilla buttercream. These pastel sugar cookie sandwiches are perfect for spring parties, Easter desserts, and festive celebrations.
Ingredients
1 cup unsalted butter softened
1 1/2 cups granulated sugar
1 large egg
1 tablespoon vanilla extract
3 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons milk
Pastel gel food coloring
1/2 cup unsalted butter softened (for filling)
2 cups powdered sugar
2–3 tablespoons milk or cream
1 teaspoon vanilla extract
Pinch of salt
Instructions
1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper
2. Cream butter and sugar together until light and fluffy
3. Add egg and vanilla extract and mix well
4. Whisk flour baking powder baking soda and salt in a separate bowl
5. Gradually mix dry ingredients into wet mixture and add milk to form soft dough
6. Divide dough and tint with pastel gel food coloring
7. Roll dough into small balls place on baking sheet and flatten slightly
8. Bake for 9–11 minutes until edges are set
9. Cool cookies completely on wire rack
10. Beat butter powdered sugar milk vanilla and salt to make buttercream
11. Spread or pipe frosting on one cookie and top with another to form sandwiches
Notes
Use gel food coloring for best pastel shades
Do not overbake cookies to keep them soft
Allow cookies to cool completely before adding frosting
Store cookies in an airtight container for best freshness
