Ingredients
1 lb Patagonian scallops (thawed)
1 tbsp avocado oil
2 tbsp unsalted butter
2 cloves garlic, minced
Juice of 1 lemon
Fresh parsley, chopped
Salt and pepper to taste
Instructions
1. Thaw scallops fully in the fridge or cold water.
2. Pat dry thoroughly with paper towels.
3. Heat oil in skillet over medium-high heat.
4. Sear scallops for 1 minute per side.
5. Add butter and garlic, cook 1 more minute.
6. Squeeze lemon over scallops and toss.
7. Garnish with parsley and serve hot.
