Peanut Butter & Jelly Banana Bread is a moist and flavorful twist on classic banana bread, combining creamy peanut butter and sweet fruity jelly in every slice.
Ingredients
4 ripe bananas, mashed
3/4 cup peanut butter
1 cup granulated sugar
1/2 cup unsalted butter, softened
2 eggs
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon vanilla extract
3/4 cup strawberry jelly
1/2 cup chopped peanuts (optional)
Instructions
1. Preheat oven to 350°F (175°C) and grease a loaf pan.
2. Whisk flour, baking soda, and salt in a bowl.
3. Cream butter and sugar until light and fluffy.
4. Mix in peanut butter, eggs, and vanilla extract.
5. Fold mashed bananas into the mixture.
6. Gradually add dry ingredients and mix until combined.
7. Pour half the batter into the loaf pan.
8. Spread jelly evenly over the batter.
9. Add remaining batter and sprinkle chopped peanuts on top.
10. Bake for 50–55 minutes until a toothpick inserted comes out clean.
11. Cool for 10 minutes before removing from the pan and slicing.
Notes
Use very ripe bananas for the best flavor.
Warm jelly slightly for easier spreading.
Store in an airtight container for up to 3 days.
Freeze wrapped slices for up to 3 months.
