Description

These warm, cheesy pimento cheese stuffed pretzel bites are the perfect homemade snack—crisp outside, creamy inside, and gone in minutes.

Ingredients

Scale

2 ¼ tsp active dry yeast

1 cup warm water

1 tbsp brown sugar

2 ½ cups all-purpose flour

1 tsp salt

2 tbsp melted butter

1 cup shredded sharp cheddar

¼ cup mayo

2 tbsp diced pimentos

Dash garlic powder

Pinch cayenne pepper

Pretzel salt (or kosher)

1/4 cup baking soda (for boil)

Instructions

1. Mix yeast, warm water, and sugar; let foam for 5 mins.

2. Stir in flour, salt, and melted butter. Knead until smooth.

3. Let dough rise 1 hour until doubled.

4. Mix cheddar, mayo, pimentos, garlic, and cayenne.

5. Divide dough into pieces. Flatten and stuff each with cheese mix.

6. Seal edges tightly and roll into balls.

7. Boil each in baking soda water for 30 seconds.

8. Place on baking sheet, brush with butter or egg wash, sprinkle salt.

9. Bake at 425°F for 12–15 mins until golden brown.

10. Serve warm with dips or as is.

Notes

You can prepare and freeze the stuffed dough before baking.

Try different cheeses like mozzarella or pepper jack.
