Description

Creamy no-bake Pineapple Christmas Balls made with crushed pineapple, coconut, and cream cheese for a tropical holiday dessert.


Ingredients

Scale

1 can (20 oz) crushed pineapple, drained

8 oz cream cheese, softened

1 cup powdered sugar

1 ½ cups graham cracker crumbs

1 ½ cups shredded coconut (divided)

1 tsp vanilla extract

1 tsp gelatin powder (optional)

½ cup chopped pecans (optional)


Instructions

1. Drain pineapple and press out extra juice.

2. Beat cream cheese until smooth, then mix in pineapple.

3. Add sugar, vanilla, graham crumbs, and ½ cup coconut; stir until thick.

4. Chill mixture for 30 minutes.

5. Scoop and roll into 1-inch balls.

6. Coat each ball in remaining coconut.

7. Refrigerate 1 hour before serving.

Notes

To make ahead, refrigerate up to 5 days or freeze up to 2 months.

Roll again in coconut before serving for a fresh coating.
