A fresh and creamy pineapple coleslaw recipe with crisp cabbage, juicy pineapple chunks, and a simple dressing.
Ingredients
4 cups shredded green cabbage
1 cup shredded carrots
1 cup drained pineapple chunks
1/2 cup mayonnaise
2 tablespoons apple cider vinegar
1 tablespoon honey
Salt and pepper to taste
Instructions
1. In a large bowl, combine cabbage, carrots, and pineapple.
2. In a smaller bowl, whisk mayonnaise, vinegar, honey, salt, and pepper.
3. Pour dressing over the vegetables and toss until well coated.
4. Chill in the refrigerator for at least 30 minutes before serving.
5. Serve garnished with extra pineapple or herbs if desired.
Notes
For a lighter dressing, use plain Greek yogurt.
Add chopped jalapeños for a little heat.
Keep dressing separate until serving to maintain crunch.
